Pisca Andina (Winter Potato Soup) & Andean Arepas

INGREDIENTS NEEDED:

PISCA ANDINA - POTATO WINTER SOUP - SERVES 4

1 Liter Chicken Broth, salted

4 Idaho Potatoes, peeled and cubed

1 Bunch Green Onions, sliced in small rounds

3 Cloves Garlic, minced

2 Tbsp Butter, room temp

4 Eggs

½ Cup White Cheese, cubed

½ Cup Milk

½ Bunch Cilantro, chopped

Salt, to taste

AREPA ANDINA:

½ pound Wheat Flour

Baking Powder

Sugar

1 Tbsp Butter, room temp

1 Egg

½ Cup Milk, warmed

Salt, to taste

TOOLS NEEDED:

Medium soup pot

Cutting board / knife / potato peeler

Mixing bowl

Griddle or grill pan
