Akwaaba! Chef Afia Anabasua was born in Accra Ghana. As far back as she can remember, cooking has been a part of her life. She still remembers sitting around the cooking fire in Ghana, helping her mother and older siblings cook. Today, she cooks dishes found throughout the African continent at her Los Angeles based event & catering company, Taste Africa in Style. She brings a modern, healthy twist to traditional flavorful African dishes. She believes we eat with our nose, our eyes, and our mouth, and brings a modern, healthy twist to traditional, flavorful African dishes. FEATURED RECIPE
African Tatale (Plantain Pancakes and Chickpeas)
INGREDIENTS NEEDED
2 plantains, almost black - buy and keep for days!
1 red onion
4 cloves garlic
1/2 inch ginger
3 scallions
Roma tomatoes
Fresh parsley
Fresh cilantro
Lemon (1 tbsp lemon juice)
Cherry tomatoes (for salad)
½ jalapenos (for salad)
½ cucumber (for salad)
2 tbsp coconut flour, ½ tbsp cassava flour (or use AP flour for both)
1 tsp baking powder
1 cup dried chickpeas, soaked overnight, cooked over low heat for 2-3 hours before zoom (or substitute 1 can chickpeas)
Cumin
Coriander
Cayenne (optional)
Salt and Pepper
