This July, we're honored to welcome Guest Chef Ethan Frisch, co-founder of Burlap & Barrel. Ethan has traveled the world to source the most unique, flavorful spices for both professional chefs and home cooks. At Burlap & Barrel, he's created an ethically-sourced supply chain by working directly with the generations-old family farms who produce these superior products. This month's menu is a culinary journey through four spice-producing regions in Turkey, India, Afghanistan, and Zanzibar. These are some of Ethan's favorite traditional dishes from places he's visited, and we hope they'll become yours too!

COURSE 1: Turkish breakfast: cheeses, jams, veggies (spice highlights - cured sumac, black urfa chili, king caraway)

COURSE 2: Indian pav bhaji: slow-cooked vegetable stew with toasted buns (spice highlights - new harvest turmeric, nile coriander, cinnamon verum)

COURSE 3: Afghani ashaak: leek dumplings in lentil sauce, yogurt, cilantro (spice highlights - wild mountain cumin, herati saffron, black nigella seed)

COURSE 4: Zanzibari pudding: dough pearls, coconut milk, cream (spice highlights: yellow cardamom, stone nutmeg)

TO DRINK: Cinnamon leaf iced-tea

Ethan Frisch, Co-Founder, Burlap & Barrel

Ethan is a native New Yorker, entrepreneur and activist around issues of  intercultural communication, food systems, and social justice. Ethan has spent significant time in the kitchen as a line cook and pastry chef in New York and London, and as the chef behind Guerrilla Ice Cream, an activist ice cream cart. He’s worked with NGOs in Afghanistan and on the Syrian/Jordanian border. He is honored to serve on the Board of Directors of the Bond Street Theatre, which uses theater to teach conflict resolution in areas of instability around the world, and Restaurant After Hours addressing the mental health crisis in the restaurant industry, and on the Advisory Boards of the student-led justice organization CHOOSE and Fragments Theater in Palestine. He is also on the Organizing Committee of the Queens International Night Market. He holds a dual Bachelor’s Degree in Conflict Studies and Education and  Social Change from CUNY, and a Master’s Degree in Violence, Conflict and Development from the University of London's School of Oriental and African Studies. He certainly spiced things up at Brunch Club in July 2019!
